Method:

- Layer 1: half rice spread, saffron milk sprinkle. Layer 2: egg-masala mixture. Layer 3: remaining rice, more saffron milk, fried onions, mint.
- Seal pot (dum) తో low heat 20 minutes cook చేయండి.
2. కోడి గుడ్డు పులుసు (Andhra Egg Curry)
Tamarind-based tangy curry. Rice తో perfectly match అవుతుంది.
Ingredients: 6 boiled eggs, tamarind pulp 2 tbsp, onions 2 (chopped), tomatoes 2 (pureed), green chillies 3, curry leaves, mustard seeds, turmeric, red chilli powder, coriander powder, salt, oil.
Method:
- Tadka: oil, mustard seeds, curry leaves, chopped onions — sauté until golden.
- Ginger-garlic paste add, tomatoes, turmeric, chilli powder, coriander powder add. 5 minutes cook.
- Tamarind pulp + water + salt add. 10 minutes simmer.
- Boiled eggs halve చేసి add. 5 minutes low heat.
- Coriander garnish. Serve with rice.
3. గుంటూరు గుడ్డు వేపుడు (Guntur Egg Fry)
Guntur chilli spicy fry. Roti, rice, chapati తో perfect.
Ingredients: 4 boiled eggs, Guntur red chilli powder 2 tsp, onions 2, garlic 8 cloves, curry leaves, turmeric, salt, oil 3 tbsp.
Method:
- Eggs hard-boil, peel, cut lengthwise each into 4 pieces.
- Pan లో oil heat, curry leaves, minced garlic, chopped onion — fry till golden.
- Turmeric, Guntur chilli powder, salt add. 1 minute cook.
- Eggs add, gently toss to coat with masala. 3-4 minutes high heat fry.
- Fresh coriander garnish. Hot serve.
4. పెసర గుడ్డు దోస (Egg Pesara Dosa)
South Indian breakfast. Moong dal dosa లో egg embedded.
Ingredients: 1 cup moong dal (soaked), 1/2 cup rice, ginger, green chilli, salt. Plus 2 eggs per dosa, onions, coriander.
Method:
- Moong dal + rice grind with ginger, chilli, salt. Smooth batter consistency.
- Griddle heat. Thin dosa spread.
- Crack 1 egg on top, spread gently with spatula. Sprinkle onions, coriander.
- Cook until egg set, dosa golden on bottom.
- Fold and serve with coconut chutney.
5. అండా ఫ్రై పకోడీ (Egg Pakora)
Hyderabadi street food favorite. Tea time snack.
Ingredients: 4 hard-boiled eggs, besan 1 cup, rice flour 2 tbsp, red chilli powder, turmeric, carom seeds (ajwain), ginger-garlic paste, salt, water, oil for deep frying.
Method:
- Besan, rice flour, chilli powder, turmeric, ajwain, ginger-garlic paste, salt mix. Water add for thick batter.
- Boiled eggs halve (or whole).
- Oil medium-hot. Each egg piece batter lo dip chesi deep fry until golden.
- Paper towel lo drain. Chutney, sauce tho serve.
